Super moist banana bread muffins

Looking for a simple and tasty recipe that will have your child’s teacher and classmates enjoying the naturally sweet treat that only bananas can make happen? Check out this recipe that we just had to share provided by one of our Family Sponge readers.

Banana Bread Muffins

1/2 cup (1 stick) Butter, softened
1 1/4 cups granulated sugar
2 eggs
4 tbsp cream cheese
1 1/2 cups flour, all-purpose (white)
1 tsp baking soda
1 tsp vanilla extract
1 1/2 cups (2-3 large) ripe bananas, mashed

Preheat the oven to 350°F. Beat butter, cream cheese and sugar together until smooth like frosting. Add eggs and mix well. Add flour, baking soda, vanilla, and bananas and mix. Pour into cup-cake mold and bake for 45 – 55 minutes (or until toothpick in center comes out clean). Let them cool down and Enjoy!

Note: For an alternative healthier option, substitute the cream cheese with yogurt or sour-cream. You can always use maple syrup or agave in place of sugar. And if your local farmer’s market or grocery store carries apple bananas use 7 of those instead.

    This looks like a simple and yummy recipe. Might be a good thing to make as a breakfast finger food, everyone can enjoy while preparing the Thanksgiving feast.

    I agree- sounds yummy. My husband uses a recipe printed on the bag of flour. We will have to try this one with cream cheese. Can’t wait!
