
Basil + Mozzarella + Tomato = quick, fresh and easy sandwich recipe. I always have ingredients on hand to make tuna sandwiches and a peanut butter and jelly sandwich. Life as a mom. But during my grocery trip to Trader Joes last week, I was inspired to purchase a mozzarella cheese log. I know a cheese log does not sound very appetizing, but slice that bad boy up, and you have three perfect circles to place on this toasty sandwich.
This recipe is very basic and simple, but each time I make one, I fall more in love with this fresh and flavorful sandwich.

Tomato, Mozzarella and Basil Sandwich:
1 sandwich loaf (italian or sourdough)
mozzarella cheese log, 3 thick slices
3 fresh basil leaves
1 tomato, sliced
1 tbsp extra virgin olive oil
1/2 tbsp balsamic vinegar
sea salt
black ground pepper
Lightly toast your bread loaf. Rinse and remove the stems from your basil leaves and place on on your bread. Place mozzarella slices on top of basil leaves. Place tomato slices on top of mozzarella. Mix olive oil and balsamic vinegar in a small bowl. Drizzle on top of tomatoes. Sprinkle tomatoes with salt and pepper. Close the sandwich.
Press the sandwich down to absorb all of the saucy goodness and serve with a side of olive oil and balsamic vinegar. Dipping the sandwich is the best part!
